Shizuoka Prefecture, with its warm and mild climate, has long boasted high citrus production, especially mandarins. Only the richly flavored lemons grown in this blessed land are used. These lemons are aromatic, have a sharp acidity, and are safe, delicious, and of the highest quality.

Salted lemon is a traditional seasoning widely enjoyed in North Africa and the Mediterranean region, including Moroccan cuisine.
It's a simple preparation of chopped or whole lemons pickled in salt for several months. This salt curing ferments the lemons, adding a savory note to their acidity and transforming them into a rich, flavorful ingredient.
The thickened juice is perfect not only as a spice, but also for sauces and dressings.
